WESTPORT — For those who have never tried Israeli cuisine, and for those looking forward to enjoying foods rooted in family traditions or travels to Israel, the menu at the new Blondinit Israeli Eatery fulfills those cravings.

And, so far, “We’ve been received with open arms,” said Inda Sade, who opened The Blondinit at 29 Church Lane with her husband, Solomon Sade, on March 28.

Solomon, who is from Israel, and Inda, who has family in Israel and the Ukraine, started planning their dream restaurant in Westport three years ago. It’s the first restaurant venture for the couple, although they own several businesses in the real estate and financial sectors, according to Solomon Sade.

Solomon said he was inspired to open a restaurant as an extension of his favorite pastime — “It’s my passion for food. I love to cook,” he said.

The restaurant name, Blondinit, means blonde woman in Hebrew, Solomon said, and it was chosen in tribute to his wife.

And for Inda Sade, the importance of bringing Jewish and Israeli culture to the restaurant was of primary importance. 

Shabbat candle lighting was held in the restaurant on the first Friday it was open for business, a practice that will take place every Friday at sundown. 

The new restaurateurs describe the menu offered for lunch, dinner, and soon for weekend bunch, as authentic Israeli cuisine — ranging from a boker tov, a cocktail similar to an espresso martini, to a variety of Nish Nush (snacks) and Salatim (salads and appetizers).

A favorite dish on The Blondinit’s menu is schnitzel, or breaded chicken breast, topped with Israeli salad and tahini.

“Everything is fresh, all scratch made,” Solomon Sade said. “There are no fillers, no microwaving.” They don’t even have freezers because unused food is donated to area organizations at the end of the day and nothing is frozen. 

Most of The Blondinit’s food is imported from Israel, while spices and other ingredients come from a supplier in Brooklyn. An employee travels to Brooklyn three or four times a week for freshly made pitas, Solomon said.

“We’d rather lose a little profit” than skimp on ingredients, he added. “Our quality is second to none.”

Now Westport residents, the Sades first thought they would open a restaurant in New York, but the pandemic thwarted their plans. When they moved to Westport, the space on Church Lane, previously occupied by the Manna Toast restaurant, became available and they began planning a restaurant in earnest, Solomon said.

They paused plans to open again on Oct. 7 of last year when Israel was attacked by Hamas terrorists because their priority was to focus on the fate of their families. Unfortunately, the Sades learned that Inda’s cousin was killed, she said.

Some people in Westport wondered if the Sades would carry through on their plans to open The Blondinit after October’s attack and the instances of antisemitism in Westport and elsewhere that occurred in the aftermath.

Despite that, the couple said they did not waver in their plan to open an authentic Israeli restaurant. 

“We’re here to stay,” Inda Sade said.
